Crispy on the outside, fluffy and light on the inside, filled with homemade chocolate ice cream and whipped cream – a top-class culinary cloud made from choux pastry. The dough is stirred vigorously in a hot pot – this is the most important step in the production of the choux pastry. We will show you step by step how you can make this sweet delicacy from choux pastry yourself.


  • 500ml water
  • salt
  • 1 tablespoon of sugar
  • 100g unsalted butter
  • 300g flour
  • 8 eggs
  • 1/2 tbsp. baking powder

First boil the water in a saucepan with a little salt, sugar and butter. Once the butter has melted completely, the flour is added all at once. It is really very important that all of the flour is added at once! Now stir with a wooden spoon vigorously until a lump has formed and a white coating is visible on the bottom of the pot. This is what we call a culinary workout.

Now place the warm dough in a mixing bowl and stir in one egg at a time using a hand mixer at the highest setting. It is best to use the dough hook. Now add the baking soda to the dough through a sieve and knead everything thoroughly using the hand mixer. Then pour the mass into a piping bag with a large star nozzle and pipe the cream puffs onto the baking sheet.

Bake at 356 degrees for about 35 minutes, never opening the oven door! Let the cream puffs on the cake rack cool, cut in half and fill with cream, ice cream and / or fruit as desired. Enjoy ♡
